For the filling you will need to:

Soften 1 Tbsp gelatin in 1/4 C. cold water.

Mix together in a saucepan:
1/2 C. sugar
4 Tbsp flour
1/2 tsp salt

Gradually stir in 1 1/2 C. milk

Cook over low heat, stirring until it boils. Boil 1 min. Remove from heat and stir in softened gelatin. Cool. When partially set, beat with a rotary beater until smooth.

Blend in: 3/4 tps vanilla and 1/4 tsp. almond ext.
Gently fold in: 1/2 C whipping cream (whipped until stiff)
Carefuly fold into a meringue of:
3 egg whites
1/4 tsp cream of tarter
12 C. sugar

Fold in 1 C. moist coconut.

Pile into a pie shell. Sprinkle with coconut. Chill until set (about 2 hours) Serve cold. Take pie out of fridge about 20 min. before serving.

This recipe is for a 9in pie.
